Phoenix 5000 NIR Flour Analyzer

Phoenix 5000 NIR Flour Analyzer

The Phoenix 5000 is a near-infrared (NIR) flour analyzer that measures moisture, protein, and ash in about 30 seconds — with no reagents and no sample preparation. Built for the pace of a working mill, it lets millers and bakers analyze incoming wheat, in-process stock, and finished flour on a single instrument.

Because NIR flour analysis returns results in seconds instead of hours, your team can adjust milling in real time rather than waiting on the lab — tightening moisture and ash control, holding finished flour to spec, and protecting yield. Every test runs on the same Phoenix 5000, from wheat receiving to the final blend.

How Flour Mills Use NIR Analysis

The Phoenix 5000 NIR analyzer brings precision to every stage of flour milling, letting you analyze incoming wheat, in-process stock, and finished flour on a single instrument.

Each scan measures moisture, protein, and ash in about 30 seconds — with no reagents and no sample prep — giving millers the real-time data they need to control quality, hold product to spec, and protect yield.

The Phoenix 5000 helps flour mills tighten quality control across four key stages of milling:

Receiving & Blending

  • Grade incoming wheat by moisture and protein

  • Blend wheats to a grist that meets spec

Tempering

  • Confirm target moisture before milling

  • Optimize yield and milling speed

Milling

  • Monitor ash and protein on flour streams

  • Catch sieve breaks before ash spikes

Finished Product

  • Confirm finished flour to spec at outloading

  • Cut lab turnaround and cost

What the Phoenix NIR 5000 Measures

Moisture

Track moisture from wheat tempering through finished flour to maximize yield, protect shelf life, and keep product within milling spec.

Protein

Verify protein to match flour to its end use — bread, all-purpose, or cake — and guide wheat purchasing and blending decisions.

Ash

Measure ash to monitor extraction rate and flour grade, confirming how much bran carries through and keeping refinement consistent.

Flour Ash Analysis in Seconds not Hours

In flour milling, ash is the classic measure of how cleanly endosperm is separated from bran — the number that defines flour grade and extraction. Measuring it the traditional way is slow. The Phoenix 5000 gives it to you in one scan.

Traditional Ash Testing

  • Sample incinerated in a muffle furnace at high heat

  • Hours per sample to complete

  • Destroys the sample; only mineral ash remains

  • Depends on analyst skill and exact weighing

  • Results arrive long after the mill has moved on

Phoenix 5000 NIR

  • Ash from a single scan in about 30 seconds

  • Non-destructive — the sample stays intact

  • Same scan also returns moisture and protein

  • Precision comparable to routine lab testing

  • Fast enough to adjust extraction while it matters

Hours → ~30 seconds

NIR works for ash because it senses exactly what ash testing is really after — the trace bran carried into the endosperm. That makes it accurate enough to stand in for furnace testing in routine quality control, while delivering results in time to act. For ash on your specific products, describe your application and an NIR specialist will follow up.
